You know the situation, you keep buying and buying and then you realize your freezer is packed. All of those childhood hours spent playing tetris are finally put to good use. Push, squeeze and force the door closed and hope it holds. This situation caused us to start Challenge Eat the Freezer!
Well we hit our freezer limit. Honestly, we probably hit it a few items ago but we decided we were done. No more buying anything frozen until we work through what we’ve already got.
Popsicles, ice cream, pork chops, tv dinners, fruit, veggies, pureed baby food, roast, chicken patties, chicken breasts, chicken thighs, CHICKEN CHICKEN CHICKEN. Now I’ll admit it, I do 99.9% of the grocery shopping so this is all my fault. But come on, when there’s a good deal on chicken (or meat of any kind) you buy ALL THE CHICKEN!
Big Coop and I embarked last week on Challenge: Eat the Freezer!
The challenge is that we don’t go out to eat (unless previously planned with friends and such.) So far we have done very well. I added a little twist to this challenge…don’t actually PLAN what we’re going to cook until it is time to cook, and only use ingredients we have in the house.
You need to know how out of my comfort zone this is. I am a very strict recipitarian. Standby while I trademark that. 😉 Anyway, I find it very hard to not follow a recipe. Big Coop, however, can make a gourmet meal out of literally NOTHING. I am not quite as skilled. Until this past week that is.
We’ve made some really great meals with all of the frozen meat in our freezer and slowly but surely we are making room. OF COURSE, as soon as we start to see some progress, Little Coop’s favorite chicken patties go on sale. UGH! Maybe we’ve just been making room for those?
Some of the meals we’ve made:
- Baked Jalapeno Chicken Thighs
- Baked Cajun Chicken Thighs
- Baked Garlic and Herb Chicken Breasts
- Pork Chops
- Ground Beef/Pork Tacos
- Cuban Pork over Rice x2
- and tonight…spaghetti
Have you ever had an “eat the freezer” or “eat what we have” challenge? How did it go?
